FL!M - TOM YAM GOONG RECIPE

Try this easy recipe, This is very basic for those who don’t like to follow the recipe
This recipe is perfect for you :-)

Flim's Tom Yam Goong Recipe

Ingredients

  • Lemongrass 10 pieces

  • Galangal 3 pieces

  • Lime leaf 20 pieces

  • Fish Sauce

  • Lime

  • Coriander

  • Green Onion

  • tomato

  • Chicken thigh

  • Salt

  • Coconut

  • Onion

  • Red Chilli 15 chillis

  • Mushroom

    Prawns

    Preparation

  • Prepare the stock soup with the chicken thigh and the whole Onion cut and put in the water ( about eight bowls ) to make the chicken broth.

  • Cut lemongrass, lime leaf, galangal, coriander, Onion, Green Onion, Mushroom, tomato, lime, red chili, so they are ready for mixing like a perfect mise en place

  • Add lemongrass, red chili, galangal, lime leaf into the chicken broth.

  • After about 30 mins of boiling, you will make sure to take the dirt and the foam bubble out

    of the soup, so the soup is clean.

  • Drain the chicken broth and leave with just the beautiful soup. Take out all of the pieces of lemongrass, lime leaf, and all of the skins of the soup. Keep them on the side so you have the clean chicken broth with the taste of lemongrass. This is when the magic happens.

  • Squeeze lime juice use about one bowl of lime juice

  • Add lime juice to the soup.

  • Add the smelly fish sauce into the soup ( Almost one bowl, not too much, so you have the taste of the lime juice upfront )

  • Add tomato and mushroom ( add a lot to make the massive soup )

  • Now you have the soup with the tomato and mushroom with the taste of Tom Yam, It

    should have a Sour taste up front and a Salty taste followed.

  • Grind all of the skins from the leaves, lemongrass, galangal, and add some tomato for the red color and tomato taste in the mortar or a blender to make the Tom Yam paste

  • Add the paste to Tom Yam.

  • Add Big prawns or meat of your choice, Tom Yam is good with Prawns and kinds of

    seafood, but You can also add chicken.

  • Serve the hot beautiful, delicious soup in a bowl and add coriander and green onion.

Fun cooking in Antibes again this past weekend

This past weekend I cooked for Cedric at his daughter's birthday party in Antibes.

The party was casual and fun.

I got there at 10 AM and started preparing the curry chicken, followed by Spring Roll, and finishing the kitchen work with the Pad Sea Ewe Noodle and Basil Beef.

I had so much fun cooking because the party was for friends and family that I know very well.

I am glad to cook there again as this is the 4th year that I have cooked for Cedric's daughter's birthday party.

Francois and Charly, thank you for helping me make things faster with the deep-fried mission.

It was a fun cooking weekend.

Hello everyone,

Welcome to Flim's Thai Kitchen weekly newsletter and blogpost

I hope you all are doing well and had a great weekend with your loved ones.

If I can guess, You all have been cooking some great meals at home for your family because I did some cooking too this past weekend.

I was honored to cook for Corrine from Antibes for her birthday, which was the second time.

The menu they ordered was Menu Phuket,

and This is another way of enjoying my Thai cooking as catering instead of a Private Chef service.

I enjoyed cooking in my kitchen and delivering the food, and the cost for all was much cheaper.

However, I miss cooking at my client's house because of our conversation during the cooking session.

The whole process of being there and enjoying the great company while providing my service and seeing people enjoy tasting my foods is a great feeling.

I finished my Spicy Sunday cooking for another of my clients, Daniel and Charlotte, who drove from Antibes to get the food in Cannes.

What a great weekend, and I am ready for another cooking class tomorrow in my kitchen.

Hello Everyone, 

Welcome to my Thai Kitchen recipe blog post. 

Today I will give you a simple recipe for the Massaman curry paste 

Massaman is the curry from southern Thailand with the taste style from Malaysia and Muslim culture.

You can make Massaman curry with chicken, The best type of chicken is chicken breast or any part with bones+ chicken will make an excellent Massaman curry. You can also make Massaman with pork and beef. The choice is up to you. 


Here is the Ingredient 

  • 2 tsp toasted coriander seeds

  • 2 tsp toasted cumin seeds

  • ½ tsp white peppercorns

  • 1 ½ tsp ground cinnamon

  • ½ tsp ground cloves

  • ¼ tsp ground nutmeg

  • ½ tsp ground cardamom

  • 40g mild, dried red chilies, seeds removed

  • 2 tsp salt

  • ½ cup chopped shallots

  • ⅓ cup chopped lemongrass, use only the bottom half of the stalk

  • ¼ cup chopped galangal

  • 4 cilantro roots

  • ¼ cup chopped garlic

  • 2 tsp fermented shrimp paste (gapi)

Instructions

Combine all dry spices in a coffee grinder and blitz until fine; remove from the grinder and set aside. Grind the dried chilies in the coffee grinder until fine and set aside.

Add all remaining ingredients into the blender jug and blend into a rough paste using an immersion blender. Add all the dry ground ingredients and keep mixing, scraping in between as needed, until smooth.

Using a mortar and pestle:

  1. Pound lemongrass, galangal and cilantro roots, and salt until it becomes a fine paste.

  2. Add shallots and garlic and pound until fine, adding the dry spices as needed to help absorb moisture and increase friction.

  3. Once it is a fine paste, add any remaining dry spices and the shrimp paste and pound to mix well.

Happy new year, 2022 is already fabulous! I am delighted to be alive and share my love and passion for Thai cooking with you guys. And the first blog post of 2022 is my Pad Thai Recipe.


If you follow the instruction correctly, you will make the best Pad Thai every time.

(Grandmother’s recipe from Surat Thani, Thailand)
INGREDIENTS:

5mm rice noodles 1 lemon

2 lime

1 green onion

1 carrot

1 tablespoon of vegetable oil 1 or 2 eggs

GARNISH:

Diagonally sliced cucumber (about 6-8 slices) Sliced tomato (about 6-8 slices)

Quarter lime

Fresh cilantro, roughly chopped

Pinch of paprika

1 tablespoon of fish sauce

1 tablespoon of oyster sauce 1 tablespoon of palm sugar 1 cup bean sprouts

1/3 cup of peanuts

2 chicken breasts

Thinly sliced red chili (to sprinkle over top of the finished dish)

*OPTIONAL INGREDIENTS*

8 ounces of shrimp (deshelled and deveined) Firm tofu, cut into cubes

1 tsp curry powder

1 small red chili, thinly sliced

INSTRUCTIONS:

  1. Wash and dry all the produce. Soak the rice noodles in a bowl of room temperature water for about 40 minutes until softened. Prepare the lemon/lime juice by cutting the lemon and one of the limes in half and squeezing the liquid into the same bowl. Cut the second lime into quarters to garnish on the finished plate.

2. Thinly slice the green onion and the carrot on a diagonal. Further cut the carrot slices into matchsticks.

3. Dry the chicken with a paper towel. Cut the chicken in half lengthwise and then thinly slice. (If adding shrimp, rinse under cool water for about 5 minutes, dry with a paper towel, deshell, and devein. If adding tofu, drain and cut the desired amount into cubes)

4. Crush the peanuts with the bottom of a smaller bowl or a flat bottomed cup in a large bowl.

5. Add 1 tbsp of oil to a large pan and heat on high until hot. Add the chicken to the pan, crack an egg into the pan, and mix to coat the chicken. Cook for 4-5 minutes, occasionally stirring until chicken is cooked through.

*OPTIONAL* Add 1 tsp of curry powder and 1 sliced chili to taste.

6. Add 4 tbsp of the lemon/lime juice, a pinch of paprika, and 1 tbsp each of the fish sauce, oyster sauce, and palm sugar. Mix to combine and continue cooking for 1 minute. (If making this dish with shrimp or tofu, add the shrimp now and cook until they are bright pink and cooked. Remove the shrimp from the pan and set aside to avoid overcooking)

Meanwhile, drain the noodles until all the water is gone. Add noodle and chicken to the wok and stir them with egg.

7. Add a handful of crushed peanuts. Taste to see if you need to “master” the flavor (by “mastering” the flavor, you can perfect the taste of the dish by adding more of the ingredients if needed until the desired flavor has met).

8. Add a handful of bean sprouts, green onion, and carrots. Cook a bit longer, about 30 seconds, to combine the flavors. Remove pan from heat.

*OPTIONAL* Serve the pad thai with a garnish of diagonally cut cucumber slices, tomato slices, quarters of lime, fresh cilantro, and a sprinkle of crushed peanuts and thinly slice red chili for color.

Talking about fun things to do!

I must say I love teaching a cooking lesson, To people especially when they love food and have a passion to cook and love everything about food

To make it more special and remarkable with new people that I continue to meet is that we all have one thing in common and that thing is we know about my country Thailand, We know about the food, We know about Thai culture and the way we present the food

My lesson is always simple and the goal is to make it easy for my student to learn and remember how to make great and delicious Thai food

Most of the time I have followed so many exciting recipes on the internet and it doesn’t give the real sense of taste and the real feeling of that particular dish because It missing the present moment of teaching and learning moment experiences that you can get when you teach and learn together face to face

The laugh and joyful and fun conversation during the session and the new ideas, all of everything come together because everyone is there to enjoy and have a good time cooking together

I am quite honored to have taught so many people how to make delicious Thai food that they can decide for themself what to put in the food but give them a very special personal technique from my own experiences.

This can’t be replaced with the proper recipe. It is a personal thing and it is the love that you put in your cooking.

That was my latest cooking class for my new friends from Russia. We love Thai food and we love Thailand and will always be grateful to share the fun moment with all.

Thank you for supporting my Thai Kitchen project that slowly growing steadily one step at a time with the process that I enjoy.

Thank you to those that told me that I should open a Thai restaurant and make money, Yes I want to and I will, But that will happen when the time is right and I am solely enjoying the cooking freedom and another freedom to do music as a DJ/Producer at the same time.

Crab meat curry fried rice

Delicious fried rice recipe for you!
Here is how you make the curry fried rice crab meat, it is very simple and easy to make let me know if it is delicious or not! The tweak is up to you:-)

Ingredients:
Crab Meat 300 grams
Jasmine rice 1 bowl
Garlic 2 cloves
Vegetable oil 3 tbs
White Onion 1
Green onion chops
Cumin powders 3 tsp
White peppers just a pinch
Curry powders 1 tsp
Soy sauce 1 tbs
Fish Sauce 1 tsp
sugar 1 tsp
Salt half tsp
Egg
Lime
Cucumber

Cooking Method

First we have to cook the rice, make sure rice is not too wet, it is best to use the cooked rice that is a bit dry because it will be best to use rice that was leftover from the night before because they are dry.

1. Chop all of the vegetable in small dices, onion garlic, green onion
2. Add vegetable oil to the wok with the high heat.
3. Add chop garlic and stir them until it get brown but not too burnt:-)
4. Add crab meat and stir them until it mix well with the garlic.
5. Add egg and stir them.
6. Add this ingredient to get the taste and stir them so that the crab meat mixed well with all of the spices.

Soy sauce 1 tbs
Fish Sauce 1 tsp
sugar 1 tsp
salt half tsp
Cumin powders 3 tsp
White peppers just a pinch
curry powder 1 tsp

You will get the yellow colour crab meat that mixed well with garlic, egg and all of the ingredients.

7. add white onion chop in dices in it turn the heat back on.

8. Add cooked rice and stir them until the rice mix well together with everything.

9. Serve it and garnish it with the green onion on top with lime and cucumber on the side.

10. Enjoy your meal.

MAGIC OF STIR-FRY

Hello Everyone
I would like to share some information about home cooking with you guys, Cooking at home can be fun and easy once you know the basic of the sauce and ingredient. This can save you time and money.
Have you been to a restaurant and had a lot of food, well fed but after you are still  hungry?

This is when Stir-fry is a good solution for your kitchen.

By understanding the basic principle of stir-fry it can help you save a lot of money on food.
Today I am going to share with you the basic of stir fry sauce.

Stir fry method can be fast and easy to cook, also taste so good and more over it is very healthy for you but you have to make sure to choose the right kind of oyster sauce and soya sauce. (NO MSG )

In Thai cooking we do a lot of stir-fry, for 1 stir-fry at home for a meal will take between 5 to 10 minutes.
15 minutes for rice in the rice cooker
and 10 minutes of stir fry you can have a healthy meal with rice at home.
Here is the main ingredient to have in your kitchen for stir fry

Garlic (without this your stir fry will be plain as a sandwich.)
Onion
Mixed vegetable of your choice
Broccoli. Carrot, green onion, coriander,
Chilli (this is a must for stir fry. A little bit of it can add spice to your day.)
basil

any kind of meat
Chicken
beef
pork
shrimp
squid
lamb

Stirfry sauce
Vegetable oil
Oyster sauce
Soya sauce
fish sauce
brown sugar
dark soya sauce
Now you have the basic ingredient of stir fry in the fridge and whenever you get hungry, no more order pizza or sushi because you can make a big meal that is tasty at home within 30 minutes or less.
Flim's Instruction.

Number 1: Always make rice before, before you start cooking you must make sure you add rice in the rice cooker so that when your stir fry done you have rice to go with it.

Number 2.
Add 3 Table spoon of vegetable oil to the wok, you can use pan if you don't have a wok.

Add garlic to the oil makes it cook until it brown. If you want to make it authentic, just like in Thailand. You have to make sure it completely turned into black colour. :-) burned garlic can be really tasty, it is my favourite to eat burned garlic hahhah this I will let you decide:-)

number 3:

Add meat, you can add chicken or any kind of meat.
make the garlic oil cook that meat

then add all of the vegetable at the same time.( vegetable of your choice)

Number 4: MIXING
This is very important part of the stir fry, same as making music, you have to make sure you add the sauce with the right balance.
I would normally go for this mix of sauce for one portion.

Oyster sauce one table spoon
Soya sauce one table spoon
Fish sauce one small teaspoon
Sugar one small teaspoon.
Dark soya (optional ) sauce one small tea spoon

  number 5: MASTERING The most important step

just like every music production you need the mastering before it become a great music production.
food is the same thing. This is the reason why when you go to a restaurant some western food have no taste because they often follow a recipe without tasting or mastering. ( no party in your mouth)

TASTE your food, taste the sauce of your stirfry and make sure that the sauce is in the nice balance.
For example: if it is too strong, you might need to add a bit of soup or water.
or too sweet you add a bit of fish sauce
Too salty? You can add a bit of sugar or lime juice to help with the taste of your stir fry.


NOW you can make your own stir-fry at home
if you want to make a basil chicken, just add basil or add ginger to it then it turned to ginger chicken.

You can do just about anything with your stir-fry.
This is the magic and basic technique of Asian stir-fry.
